For the Panna Cotta

1 12 cups Greek yogurt, unsweetened
12 cup low-fat buttermilk
1 14 teaspoons gelatin
2 tablespoons very cold water
2 tablespoons sugar
12 tablespoon vanilla bean paste
1 tablespoon rose water

Instructions

  • Preparation

    1. In a mixing bowl, whisk together the Greek yogurt and low-fat buttermilk until smooth. To bloom the gelatin, combine the cold water in a small dish and sprinkle the gelatin over the surface. Let it sit for 5 minutes, then gently heat in the microwave for 30 seconds until fully dissolved.
    2. In another small bowl, mix together the sugar, rose water, and vanilla bean paste. Stir in the melted gelatin until well incorporated. Combine both mixtures, whisking until fully blended and smooth.
    3. Pour the mixture into a mold or desired serving dish. Refrigerate for a minimum of 3 hours or until set. For serving, you may present it in the dish or, to unmold, briefly dip the bottom of the dish in hot water and invert onto a plate.
