   Coffee Rubbed Baby Back Ribs with Dark Roast Coffee Barbecue Sauce

Instructions
| For the rub: | |

| 1. | Mix the ground cayenne pepper, dried chipotle powder, smoked paprika, ground cumin, salt, and ground black pepper in a small bowl. | 
| 2. | Massage the spice mixture generously all over the baby back ribs. | 
| 3. | In a medium saucepan, gently boil the dark beer until it reduces to about 1 cup. | 
| 4. | Arrange the seasoned ribs in a roasting pan or on thick foil for grilling. Pour the reduced beer around the ribs. Cover the ribs with foil and set aside. | 
| 5. | Preheat the oven to 400°F (200°C) or preheat a gas grill to approximately 350-400°F (180-200°C). | 
| 6. | Once heated, roast the ribs for about 1.5 hours. If using an outdoor gas grill, consider adding alder or cherry wood chips for a delightful aroma. | 
| For the BBQ sauce: | |
| 1. | In a medium saucepan, combine the hickory barbecue sauce, water, brown sugar, ketchup, honey, and finely ground dark roast coffee. Simmer for 10 minutes, stirring occasionally. |
