1 | tablespoon finely ground dark roast coffee (or espresso) |
Instructions

For the rub:
- Mix the ground cayenne pepper, dried chipotle powder, smoked paprika, ground cumin, salt, and ground black pepper in a small bowl.
- Massage the spice mixture generously all over the baby back ribs.
- In a medium saucepan, gently boil the dark beer until it reduces to about 1 cup.
- Arrange the seasoned ribs in a roasting pan or on thick foil for grilling. Pour the reduced beer around the ribs. Cover the ribs with foil and set aside.
- Preheat the oven to 400°F (200°C) or preheat a gas grill to approximately 350-400°F (180-200°C).
- Once heated, roast the ribs for about 1.5 hours. If using an outdoor gas grill, consider adding alder or cherry wood chips for a delightful aroma.
