Ingredients

2 chard, blanched
2 bacon, crispy
3 tablespoons butter
1 shallot, browned
2 tablespoons flour
1 cup milk, warmed
¼ teaspoon ground nutmeg
¼ cup parmesan, shredded

Instructions

1. Begin by preparing the chard: Remove the stems and roughly chop the leaves. Blanch them in salted water for a few minutes, then rinse under cold water until cool enough to handle. Squeeze out the excess water and chop the chard finely.
2. In a separate saucepan, warm the milk. Cut the bacon into small pieces and render until brown and crispy. Remove the bacon onto a paper towel, leaving about 1 tablespoon of fat in the pan. Brown the shallots in the same pan, then add the butter and let it melt. Whisk in the flour and stir for a few minutes. Slowly pour in the warm milk, whisking constantly until the mixture thickens. Season with ground nutmeg, shredded Parmesan, and salt and pepper to taste. Finally, fold in the prepared chard.
