For preparing the casserole
- Select a variety of frozen vegetables such as broccoli, cauliflower, or brussel sprouts.
- Boil the vegetables until they are close to reaching your desired tenderness.
- Cook the Minute Rice according to package instructions.
- In a large baking dish (we recommend a 9x11x4 size), combine the cooked vegetables, rice, whipping cream, sour cream, and cubed chicken if using.
- Layer thick slices of Velveeta cheese on top of the mixture.
- Bake the casserole in an oven preheated to 400°F until the cheese is melted.
- Remove the dish from the oven, stir the contents, sprinkle shredded cheese on top, and return to the oven until the cheese is melted and bubbly.
- Take the casserole out of the oven, allow it to cool slightly, and serve.
