Recipe

Blender dressing at its best: a full bunch of cilantro, Greek yogurt instead of mayo or buttermilk, sharp lime juice, garlic, and a thread of olive oil to smooth it out. Ten minutes makes three cups of something that's simultaneously a salad dressing, a taco drizzle, a grain-bowl sauce and a vegetable dip — with the yogurt keeping it bright and light where most creamy dressings turn heavy.
1 | cup loosely packed cilantro, stems removed and roughly chopped |
|---|---|
1⁄2 | cup plain Greek yogurt |
2 | tablespoons fresh lime juice (about ½ lime) |
1 | clove garlic clove |
1⁄4 | cup olive oil |
1 1⁄2 | teaspoons white vinegar |
1⁄8 | teaspoon salt |
| 1. | In a blender or food processor, puree all ingredients until a smooth and creamy consistency is achieved. |
|---|---|
| 2. | Taste the dressing and adjust the seasonings as needed. |
