Recipe

The centerpiece here is a whole round of cream cheese, baked with garlic, lemon rind and pepper until warm and spreadable, then set over a salad of chargrilled Turkish bread, rocket, avocado and grape tomatoes with a balsamic drizzle. The grilled pide does double duty — crouton and utensil — scooping up warm cheese as you go. A Mediterranean-style lunch for four in half an hour.

Preparation | |

| 1. | Preheat the oven to 200°C (400°F). |
| 2. | Place the cream cheese on a lined baking tray. Spray with olive oil and sprinkle with minced garlic, grated lemon rind, and pepper. Bake for 10 minutes until lightly browned. |
| 3. | Allow the baked cream cheese to cool slightly. |
| 4. | Cut each piece of Turkish bread diagonally into 3 slices. Spray the bread with olive oil and chargrill (or grill/broil) until golden. |
