Grilled Turkish Bread Salad with Baked Cream Cheese

The centerpiece here is a whole round of cream cheese, baked with garlic, lemon rind and pepper until warm and spreadable, then set over a salad of chargrilled Turkish bread, rocket, avocado and grape tomatoes with a balsamic drizzle. The grilled pide does double duty — crouton and utensil — scooping up warm cheese as you go. A Mediterranean-style lunch for four in half an hour.

Instructions

Preparation

1. Preheat the oven to 200°C (400°F).
2. Place the cream cheese on a lined baking tray. Spray with olive oil and sprinkle with minced garlic, grated lemon rind, and pepper. Bake for 10 minutes until lightly browned.
3. Allow the baked cream cheese to cool slightly.
4. Cut each piece of Turkish bread diagonally into 3 slices. Spray the bread with olive oil and chargrill (or grill/broil) until golden.
