Ingredients

8 baby Yukon Gold potatoes, skin on, sliced into rounds
Vegetable oil for deep frying
4 12-inch bamboo skewers
Salt, pepper, Cajun seasoning, Greek seasoning, Parmesan cheese, garlic powder, or preferred seasoning

Instructions

1. Leaving the skins on, slice the Yukon Gold potatoes into 1/4-inch rounds and thread the equivalent of two sliced potatoes onto each 12-inch bamboo skewer.
2. Heat the vegetable oil to 360°F and carefully place the skewers in the pot or fryer, ensuring the flat end of the skewer is exposed. Fry for 5 to 6 minutes until lightly golden, then remove and drain on paper towels.
3. Reheat the oil to 360°F and re-fry the potatoes until they are crispy and golden brown.
4. Season the crispy skewered potatoes with salt, pepper, Cajun seasoning, Greek seasoning, Parmesan cheese, garlic powder, or your preferred seasoning blend. Enjoy the crispy goodness!
