Ingredients

2 cups flour
12 teaspoon salt
12 teaspoon baking powder
1 tablespoon sugar
8 ounces unsalted butter, cold and cubed
12 cup sour cream, cold
6 medium-to-large apples, sliced thin
3 teaspoons ground cinnamon
3 tablespoons sugar
2 tablespoons apple juice or lemon juice
2 tablespoons unsalted butter
1 egg
1 tablespoon water

Instructions

1. Combine flour, sugar, salt, baking powder, and cubed unsalted Butter using a pastry cutter until small clumps form and the mixture develops a crumbly texture. Ensure butter clumps are no larger than the size of a pea.
2. Add cold sour cream and mix until just combined, being careful not to over mix. Wrap the dough in plastic and chill for one hour.
3. Peel and thinly slice apples. Place in a bowl with apple juice or lemon juice, sugar, and cinnamon, ensuring all apple slices are coated.
4. Preheat the oven to 350°F (175°C).
5. On a floured surface, roll out the pie crust into a 1/4-inch thick circle. Transfer the dough to a parchment-lined baking sheet.
6. Arrange the apples on the dough, either layering them in a circular design or piling them on top, leaving space to fold over the edges of the dough. Fold over the excess dough to cover the outer edge of the apples.
7. Cut unsalted butter into pieces and scatter over the apples.
8. Whisk the egg and water together. Brush the egg wash over the dough edges, sprinkle with sugar, and bake until golden brown, about 35 to 45 minutes.
9. Allow to cool, then cut into slices and serve. Add a dollop of vanilla ice cream for an extra treat.
