Instructions

For cooking the main dish
- Cook the ground beef, onion, and green bell pepper in a large skillet over medium-high heat, stirring until the beef crumbles and is no longer pink; drain the excess fat.
- Stir in the diced tomatoes and green chilies, water, rice, taco seasoning mix, and salt.
- Cover and cook over medium heat for 15 minutes, stirring occasionally.
- Uncover and cook for an additional 15 minutes, then remove from heat.
- Sprinkle the chopped lettuce, green onions, tomatoes, avocado, sliced olives, and shredded cheese over the beef mixture.
- Arrange tortilla chips around the edge of the skillet, and serve the dish with chips and salsa on the side.
