1 lb ground beef
1 small onion, chopped
1 small green bell pepper, chopped
1 can (10 ounce) mild diced tomatoes and green chilies
1 12 cups uncooked long grain rice
1 envelope (1 ounce) mild taco seasoning mix
12 teaspoon salt
2 cups chopped lettuce
3 chopped green onions
1 tomato, chopped
1 avocado, sliced
1 can (2.25 ounce) sliced black olives
1 package (4 ounce) Mexican blend cheese, shredded

Instructions

For cooking the main dish

1. Cook the ground beef, onion, and green bell pepper in a large skillet over medium-high heat, stirring until the beef crumbles and is no longer pink; drain the excess fat.
2. Stir in the diced tomatoes and green chilies, water, rice, taco seasoning mix, and salt.
3. Cover and cook over medium heat for 15 minutes, stirring occasionally.
4. Uncover and cook for an additional 15 minutes, then remove from heat.
