Ingredients

½ cup butter, softened
1⅓ cups sugar
1 egg
1 cup mashed banana (about 3)
½ cup sour cream
1 teaspoon vanilla
teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 all-purpose flour
¾ cup toffee pieces
½ cup slivered almonds, for topping (optional)
½ cup toffee pieces, for topping (optional)
browned butter
cups sifted powdered sugar
1-4 tablespoon milk
1 teaspoon vanilla

Instructions

  • For the Bars

    1. Preheat the oven to 350°F (180°C) and grease a 15x10x1-inch baking pan.
    2. In a mixing bowl, beat the softened butter until creamy. Gradually add the sugar, beating until fluffy and well combined.
    3. Add the egg, mashed bananas, sour cream, and vanilla to the mixture, and beat until smooth.
    4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until well combined. Fold in the toffee pieces.
    5. Spread the batter evenly into the prepared baking pan and bake for 22-25 minutes, or until a toothpick inserted near the center comes out clean. Allow to cool for 20-30 minutes before icing.
  • For the Icing

    1. In a small saucepan, melt one-third cup of butter over low heat until it turns a light brown color. Remove from heat and transfer to a medium bowl.
    2. Add the sifted powdered sugar, vanilla, and 1 tablespoon of milk to the bowl. Mix on low speed until combined, then increase speed to medium-high. Add more milk as needed to achieve a smooth, spreadable consistency. Additional 2 tablespoons of milk may be required.
    3. Use the icing immediately to frost the cooled banana toffee bars.
