| For the Bars | |

| 1. | Preheat the oven to 350°F (180°C) and grease a 15x10x1-inch baking pan. | 
| 2. | In a mixing bowl, beat the softened butter until creamy. Gradually add the sugar, beating until fluffy and well combined. | 
| 3. | Add the egg, mashed bananas, sour cream, and vanilla to the mixture, and beat until smooth. | 
| 4. | In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until well combined. Fold in the toffee pieces. | 
| 5. | Spread the batter evenly into the prepared baking pan and bake for 22-25 minutes, or until a toothpick inserted near the center comes out clean. Allow to cool for 20-30 minutes before icing. | 
| For the Icing | |
| 1. | In a small saucepan, melt one-third cup of butter over low heat until it turns a light brown color. Remove from heat and transfer to a medium bowl. | 
| 2. | Add the sifted powdered sugar, vanilla, and 1 tablespoon of milk to the bowl. Mix on low speed until combined, then increase speed to medium-high. Add more milk as needed to achieve a smooth, spreadable consistency. Additional 2 tablespoons of milk may be required. | 
| 3. | Use the icing immediately to frost the cooled banana toffee bars. |
