Ingredients

For the Bars

3 Weet-Bix (wholewheat breakfast biscuits), crushed
85 g desiccated coconut
120 g caster sugar
150 g self-raising flour
2 tablespoons cocoa
150 g butter or margarine, melted
1 teaspoon vanilla essence

For the Icing

1 ½ cups soft icing sugar
1 tablespoon cocoa
2 tablespoons hot water

Instructions

  • For Preparing the Bars

    1. Preheat the oven to 180°C.
    2. Grease a 16x26cm baking pan and line with baking paper.
    3. In a large mixing bowl, combine crushed wholewheat biscuits, desiccated coconut, and caster sugar. Sift in cocoa and self-raising flour, then stir to combine.
    4. Melt the butter, pour over the dry ingredients, add vanilla essence, and mix until well combined.
    5. Spoon the mixture into the prepared pan and press down evenly. Bake for 15 minutes or until cooked.
    6. For the icing, sift soft icing sugar and cocoa into a small bowl. Add hot water and mix well. Ice the bars while they are still warm.
    7. Cut into squares for serving.
