Baking the Brownies
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9x13-inch baking pan.
- In a medium-sized microwave-safe bowl or saucepan, melt the butter over low heat, then incorporate the sugar, stirring to combine.
- Return the mixture to the heat or microwave briefly until it is hot but not bubbling. As you stir, the mixture will attain a glossy appearance. A second heating will help dissolve more sugar, contributing to a shiny top crust on your brownies.
- Transfer the mixture to a mixing bowl.
- Gradually mix in the cocoa powder, salt, baking powder, and vanilla extract.
- Add the large eggs, beating until the mixture is smooth. Then fold in the flour and, if desired, the chocolate chips and chopped pecans, mixing until well combined.
- Spoon the batter into the prepared pan and spread evenly.
- Bake the brownies for 28 to 30 minutes, or until a cake tester inserted in the center comes out clean or with just a few crumbs attached.
- The brownies should feel set at the edges and in the center.
- Remove from the oven and, after 5 minutes, carefully loosen the edges using a table knife to prevent sinking as they cool.
- Allow the brownies to cool completely before cutting and serving.
