Brownie Batter

1 cup butter, melted
2 14 cups granulated sugar
1 14 cups Dutch-processed cocoa powder
12 teaspoon salt (1 tsp if using unsalted butter)
1 teaspoon baking powder
1 tablespoon vanilla extract
4 large eggs
1 12 cups King Arthur unbleached all-purpose flour
2 cups chocolate chips
12 to chopped pecans (or your favorite nut, optional)

Instructions

  • Baking the Brownies

    1. Preheat your oven to 350°F (175°C).
    2. Lightly grease a 9x13-inch baking pan.
    3. In a medium-sized microwave-safe bowl or saucepan, melt the butter over low heat, then incorporate the sugar, stirring to combine.
    4. Return the mixture to the heat or microwave briefly until it is hot but not bubbling. As you stir, the mixture will attain a glossy appearance. A second heating will help dissolve more sugar, contributing to a shiny top crust on your brownies.
    5. Transfer the mixture to a mixing bowl.
    6. Gradually mix in the cocoa powder, salt, baking powder, and vanilla extract.
    7. Add the large eggs, beating until the mixture is smooth. Then fold in the flour and, if desired, the chocolate chips and chopped pecans, mixing until well combined.
    8. Spoon the batter into the prepared pan and spread evenly.
    9. Bake the brownies for 28 to 30 minutes, or until a cake tester inserted in the center comes out clean or with just a few crumbs attached.
    10. The brownies should feel set at the edges and in the center.
    11. Remove from the oven and, after 5 minutes, carefully loosen the edges using a table knife to prevent sinking as they cool.
    12. Allow the brownies to cool completely before cutting and serving.
