Decadent Lobster Macaroni and Cheese

8 | Gruyere cheese, grated |
5 | sharp cheddar cheese, grated |
1/3 | cup freshly grated Parmigiano Reggiano cheese |
meat from 2-1 1/2 pound cooked lobsters |
Instructions
1. | Preheat the oven to 375°F. |

2. | In a large pot of boiling salted water, cook the gluten-free macaroni until 2 to 3 minutes short of al dente; then drain. It is important not to overcook the pasta as it will continue to cook in the oven. |
3. | Meanwhile, in a small saucepan, whisk together the whole milk and cornstarch; warm the mixture over low heat. In another large pot or Dutch oven, combine the cream cheese and unsalted butter over medium-low heat, stirring until fully melted. Gradually whisk in the warm milk mixture and cook for about 5 minutes, or until the sauce has thickened and become smooth. Remove from the heat, then add the grated Gruyere, cheddar, 1 tablespoon of salt, and 1/2 teaspoon of pepper. Mix in the cooked macaroni and lobster meat, stirring gently to combine. Transfer the mixture into a buttered 3-quart (or 9" x 13") baking dish. |
4. | Sprinkle the macaroni with freshly grated Parmigiano Reggiano cheese. Bake until the edges are bubbly and the macaroni is golden brown, typically around 30 to 35 minutes. Allow the dish to rest for 5-10 minutes before serving. |
