For the Cheesecake Bars

1 package yellow cake mix
3 large eggs
2 tablespoons margarine or butter, melted
4 teaspoons pumpkin pie spice
1 package cream cheese, softened
1 can sweetened condensed milk
1 can pumpkin
12 teaspoon salt
1 cup chopped nuts

Instructions

  • Preparation

    1. Preheat the oven to 350°F (175°C).
    2. In a large mixer bowl, on low speed, combine the yellow cake mix, 1 egg, melted margarine, and 2 tsp of pumpkin pie spice until crumbly.
    3. Press the mixture onto the bottom of a 15x10 inch baking pan.
  • Assembly and Baking

    1. In a large mixer bowl, beat the cream cheese until fluffy.
    2. Gradually beat in the sweetened condensed milk, 2 eggs, pumpkin, 2 tsp of pumpkin pie spice, and salt; mixing well.
    3. Pour the filling over the crust and sprinkle with the chopped nuts.
    4. Bake for 30-35 minutes or until the filling is set. Allow to cool.
    5. Refrigerate the bars and once chilled, cut into squares. Store covered in the refrigerator.
