Recipe

This coffee cake hides two layers inside a modest crumb: a sweetened cream cheese ribbon and a stripe of fresh strawberries that bake jammy against it. The vanilla batter rises around both, so every slice cuts into cake, cheesecake and fruit at once. Seventy minutes, sixteen squares, and the reason to invite someone over for coffee this weekend.

Preparing the Cake | |

| 1. | Preheat the oven to 350°F (175°C). |
| 2. | In a mixing bowl, combine softened cream cheese, butter, and sugar. Beat the mixture until light and fluffy. |
| 3. | Stir in milk, eggs, and vanilla until well combined. |
| 4. | In a separate bowl, sift together flour, baking powder, baking soda, and salt. Add the dry ingredients to the cream cheese mixture and mix until smooth. |
| 5. | Spread half of the thick batter evenly in a greased and floured 13x9 inch baking pan. For easier spreading, distribute small portions of batter across the pan and use a knife to spread it out. |
| 6. | Evenly distribute the sliced strawberries over the batter. Dot the remaining batter over the strawberries. Combine brown sugar and chopped nuts, then sprinkle the mixture evenly over the cake. |
| 7. | Bake for 40 minutes or until a toothpick inserted comes out clean. Serve the cake warm or cold. |
