1 | cup flour |
¼ | cup brown sugar, firmly packed |
½ | teaspoon baking powder |
¼ | teaspoon baking soda |
½ | cup butter |
1 | tablespoon vanilla extract |
3 | cups miniature marshmallows |
1 | (14 ounce) can condensed milk |
½ | cup creamy peanut butter |
3 | ounces chow mein noodles |
1 | cup peanuts, coarsely chopped |

For the peanut butter bars
- Preheat the oven to 350ºF (175ºC). In a medium bowl, combine flour, brown sugar, baking powder, and baking soda. Cut in the butter and 1 tablespoon of vanilla extract until the mixture is crumbly.
- Press the mixture firmly onto the bottom of an ungreased 13x9-inch baking pan.
- Bake for 15 minutes at 350ºF (175ºC) or until lightly browned.
- Evenly distribute the miniature marshmallows on top and bake for an additional 2 minutes or until the marshmallows begin to puff.
- Remove from the oven and allow to cool.
- Meanwhile, while the layers are baking, in a heavy saucepan over medium heat, combine the condensed milk and creamy peanut butter. Cook and stir until slightly thickened, about 6 to 8 minutes.
- Remove from the heat and stir in the chow mein noodles, coarsely chopped peanuts, and the remaining 2 teaspoons of vanilla extract. Spread the mixture evenly over the marshmallows.
- Allow to cool, then chill before cutting into bars.
