For the peanut butter bars

1 cup flour
¼ cup brown sugar, firmly packed
½ teaspoon baking powder
¼ teaspoon baking soda
½ cup butter
1 tablespoon vanilla extract
3 cups miniature marshmallows
1 (14 ounce) can condensed milk
½ cup creamy peanut butter
3 ounces chow mein noodles
1 cup peanuts, coarsely chopped

Instructions

  • For the peanut butter bars

    1. Preheat the oven to 350ºF (175ºC). In a medium bowl, combine flour, brown sugar, baking powder, and baking soda. Cut in the butter and 1 tablespoon of vanilla extract until the mixture is crumbly.
    2. Press the mixture firmly onto the bottom of an ungreased 13x9-inch baking pan.
    3. Bake for 15 minutes at 350ºF (175ºC) or until lightly browned.
    4. Evenly distribute the miniature marshmallows on top and bake for an additional 2 minutes or until the marshmallows begin to puff.
    5. Remove from the oven and allow to cool.
    6. Meanwhile, while the layers are baking, in a heavy saucepan over medium heat, combine the condensed milk and creamy peanut butter. Cook and stir until slightly thickened, about 6 to 8 minutes.
    7. Remove from the heat and stir in the chow mein noodles, coarsely chopped peanuts, and the remaining 2 teaspoons of vanilla extract. Spread the mixture evenly over the marshmallows.
    8. Allow to cool, then chill before cutting into bars.
