Ingredients

¼ cup vegetable oil
½ cup sugar
1 egg
1 ½ all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ mashed ripe bananas (3 to 4 bananas)
2 tablespoons water
1 teaspoon vanilla extract
1 cup chopped pitted dates
½ cup chopped nuts

Instructions

1. Preheat the oven to 350 degrees Fahrenheit.
2. In a large mixing bowl, vigorously beat together the vegetable oil and sugar until well combined.
3. Add the egg to the oil and sugar mixture, and mix until smooth and creamy.
4. In a separate medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
5. In another bowl, gently combine the mashed ripe bananas, water, and vanilla extract.
6. Gradually add the banana mixture to the oil and sugar mixture, alternating with the flour mixture, ensuring each addition is well combined.
7. Fold in the chopped pitted dates and nuts, if desired, until evenly distributed through the batter.
8. Transfer the batter into a greased and floured 9" x 5" loaf pan, spreading it evenly.
9. Bake in the preheated oven for 50-55 minutes or until a wooden toothpick inserted into the center of the loaf comes out clean.
10. Allow the banana date bread to cool in the pan for 10 minutes before carefully removing it and transferring to a wire rack to cool completely before slicing and serving.
