| 1 | tablespoon olive oil, as needed |

| 1 | small eggplant, halved lengthwise and sliced | 
| 2 | whole-grain sandwich rolls, split | 
| 1 | tablespoon garlic-and-herb spreadable cheese (such as Boursin®) | 
| 2 | cloves garlic, minced | 
| 1 | Roma (plum) tomato, sliced | 
| 1 | cup chopped fresh basil leaves | 
| To prepare the sandwich | |

| 1. | Position the oven rack about 6 inches from the heat source and preheat the oven's broiler. | 
| 2. | Brush olive oil on both sides of each slice of eggplant. Arrange the eggplant slices on a baking sheet. | 
| 3. | Broil the eggplant slices until tender and lightly browned, approximately 5 minutes per side. | 
| 4. | Broil the split rolls with the cut sides up until lightly browned, for about 2 to 3 minutes. | 
| 5. | Combine yogurt, garlic-and-herb spreadable cheese (like Boursin®), and minced garlic in a small bowl until smooth. Spread this mixture onto the rolls. Distribute the eggplant slices equally between the rolls, then add tomato slices and basil to complete the sandwiches. |
