Ingredients

3 mixed salad greens
4 eggs, fried sunny side up, and kept warm
4 slices bacon, cooked until crisp, then crumbled
1 orange zested, ½ segmented and ½ juiced
1 tablespoon Champagne vinegar
2 tablespoons olive oil
½ teaspoon fresh grated ginger
¼ teaspoon salt
¼ teaspoon white pepper
2 cups day old rustic bread, cut into bite-sized cubes
3 tablespoons butter

Instructions

1. Prepare the dressing by combining orange juice, zest, Champagne vinegar, olive oil, fresh grated ginger, salt, and white pepper in a half pint mason jar. Close the lid securely and shake vigorously until the dressing is emulsified and smooth. Alternatively, whisk the ingredients in a small bowl until well combined.
2. For the croutons, melt butter in a skillet over medium heat. Add the bite-sized bread cubes, sprinkle with salt, and allow them to brown on one side for a minute or two. Stir gently and continue cooking for a few more minutes until the croutons are golden brown and crispy.
3. To plate the salads, divide the mixed greens between two plates. Top with fried sunny-side-up eggs, crispy croutons, crumbled bacon, and segments of orange. Drizzle the salad with the prepared dressing and serve immediately while still warm.
