Elegant Braised Hoisin Beer Short Ribs
Savor the rich flavors of these braised short ribs, beautifully complemented by the sweet and savory hoisin sauce. Slow-cooked to perfection in a hearty ale and rice wine vinegar broth, these tender ribs are a true culinary delight.
Ingredients
3 | lbs short rib of beef, about 10 ribs |

salt & freshly ground black pepper | |
3 | tablespoons vegetable oil |
10 | garlic cloves, smashed |
1 | 1-inch piece ginger, peeled and sliced into ¼-inch slices |
12 | ounces good ale (recommended: Bass) |
3 | tablespoons rice wine vinegar |
½-1 | cup hoisin sauce |
Instructions
1. | Season the ribs generously with salt and pepper. |

2. | Heat the vegetable oil in a large heavy pot with a lid (Dutch oven) over high heat. Brown the ribs on all sides, in batches if necessary. |
3. | Remove the ribs and pour off all but a couple tablespoons of the rendered fat. Return the pot to the stove, lower the heat to medium and sauté the garlic and ginger for about 3 minutes. |
4. | Add the ribs back to the pot. Pour in the beer and the vinegar. Stir, cover, and simmer for 2 ½ hours. |
5. | Preheat the oven to 300°F (150°C). |
6. | Pour the hoisin sauce over the ribs, move the pot to the oven, and cook, uncovered, for 30 minutes. |
7. | Remove ribs and ginger from the sauce. Strain any excess fat from the top of the pot, leaving behind the flavorful sauce. |
8. | Serve with Creamy Mashed Yukon Gold Potatoes and Sesame Snow Peas. |
