Instructions

    1. Begin by placing the red boiling potatoes in a pot and covering them with water. Bring to a boil, cover, and gently simmer. Stir occasionally to ensure even cooking. The potatoes should be ready when a thin-bladed paring knife or metal skewer can easily be inserted and removed with no resistance, typically 25 to 30 minutes. Drain the potatoes, rinse under cold water, and drain again. Allow them to cool slightly.
    2. Next, cut the warm potatoes into 3/4-inch dice. Layer them in a bowl, seasoning with red wine vinegar, salt, and freshly ground black pepper as you go.
    3. Dice the hard-cooked eggs, celery, and sweet pickle into 1/4-inch pieces. Thinly slice the scallions and chop fresh parsley. Add these ingredients to the potatoes. Stir in mayonnaise and Dijon-style mustard until everything is evenly combined. Chill the salad, covered, before serving.
