2 tablespoons Canola oil
1 cup chopped onion
2 garlic cloves, finely chopped
1 cup packed brown sugar
1 cup rice wine vinegar
1 cup ketchup
2 tablespoons lower-sodium soy sauce
2 teaspoons dry mustard
1 teaspoon ground ginger
1 teaspoon black pepper
1 teaspoon crushed red pepper
2 whole cloves
1 ½ - black plums, quartered and pitted
1 star anise
2 tablespoons Canola oil
2 pork tenderloins, trimmed
1 teaspoon sea salt
1 teaspoon freshly ground black pepper

Instructions

  • Preparation of the Plum Barbecue Sauce

    1. Begin by heating a large saucepan over medium-high heat. Add 2 tablespoons of canola oil to the pan, swirling to coat. Sauté the chopped onion and finely chopped garlic for 5 minutes, stirring constantly. Add the brown sugar, rice wine vinegar, ketchup, soy sauce, dry mustard, ground ginger, black pepper, crushed red pepper, cloves, quartered and pitted black plums, and star anise. Bring the sauce to a boil, then reduce heat and simmer, partially covered, for 30 minutes until the plums break down and the sauce thickens. Remember to stir occasionally. Before serving, remove the cloves and star anise.
  • Cooking the Pork Tenderloin

    1. Preheat the oven to 450°F (230°C). Heat a large skillet over medium-high heat. Add 2 tablespoons of canola oil to the pan, swirling to coat. Season the pork tenderloins with sea salt and freshly ground black pepper. Sear the pork in the skillet for about 7 minutes, turning to brown on all sides.
    2. Transfer the seared pork to a foil-lined jelly-roll pan. Coat the pork with 1/2 cup of the prepared plum sauce. Roast the pork in the preheated oven for 15 minutes. Remove the pork from the oven, turn it over, and coat with an additional 1/2 cup of plum sauce. Roast for another 10 minutes or until a meat thermometer inserted in the thickest portion of the pork registers 155°F (68°C). Once done, remove the pork from the pan, let it rest for 10 minutes, and then slice it crosswise. Serve the sliced pork with the remaining plum sauce.
