Ingredients

For the Seafood Stew

1 yellow onion, peeled and minced
2 scallions, minced
2 garlic cloves, peeled and crushed
¼ cup butter or margarine
2 lbs fish fillets (use any 2 of the following: cod, flounder, haddock, sea bass, tuna)
9 ounces shrimp, peeled and deveined, or scallops
1 cup water
1 cup clam juice, bottled
1 (28 ounce) can tomatoes, do not drain
1 cup dry white wine
1 (6 ounce) (6 ounce) tomato paste
1 teaspoon salt
¼ teaspoon pepper
10 mussels, in shell, well scrubbed and bearded
10 littleneck clams, in shell, well scrubbed
1 (10 ounce) (10 ounce) package green peas, frozen
1-2 tablespoons parsley, minced

Instructions

  • For the Seafood Stew

    1. Heat a large kettle over moderate heat, and sauté minced yellow onion, scallions, and crushed garlic in butter until very pale golden, about 3-5 minutes.
    2. While the vegetables are cooking, cut the fish into 2" chunks and set aside.
    3. Add water, clam juice, white wine, tomatoes, tomato paste, salt, and pepper to the kettle. Break up any large clumps of tomatoes, cover, and simmer for 10 minutes.
    4. Add the fish, shrimp, peas, mussels, and clams to the kettle. Cover and simmer for an additional 10 minutes.
    5. Sprinkle the stew with minced parsley. Adjust seasoning with salt if needed.
    6. Serve the stew in soup bowls with hot buttered French bread on the side.
