Elegant Seafood Stew

9 | ounces shrimp, peeled and deveined, or scallops |
1 | cup water |
1 | cup clam juice, bottled |
1 | (28 ounce) can tomatoes, do not drain |
1 | cup dry white wine |
1 | (6 ounce) (6 ounce) tomato paste |
1 | teaspoon salt |
¼ | teaspoon pepper |
10 | mussels, in shell, well scrubbed and bearded |
10 | littleneck clams, in shell, well scrubbed |
1 | (10 ounce) (10 ounce) package green peas, frozen |
1-2 | tablespoons parsley, minced |
Instructions
For the Seafood Stew | |

1. | Heat a large kettle over moderate heat, and sauté minced yellow onion, scallions, and crushed garlic in butter until very pale golden, about 3-5 minutes. |
2. | While the vegetables are cooking, cut the fish into 2" chunks and set aside. |
3. | Add water, clam juice, white wine, tomatoes, tomato paste, salt, and pepper to the kettle. Break up any large clumps of tomatoes, cover, and simmer for 10 minutes. |
4. | Add the fish, shrimp, peas, mussels, and clams to the kettle. Cover and simmer for an additional 10 minutes. |
5. | Sprinkle the stew with minced parsley. Adjust seasoning with salt if needed. |
6. | Serve the stew in soup bowls with hot buttered French bread on the side. |
