Instructions
For the stew | |

1. | Heat the olive oil in a non-stick skillet until hot, but not smoking. Saute the skinless chicken thighs until browned. Remove the chicken from the pan and set aside. Add the thinly sliced onions and peppers to the pan, cooking for 3 to 5 minutes until soft but not browned. Stir in the minced garlic. |
2. | Carefully drain the canned tomatoes, reserving the liquid in a cup or bowl. Mash the tomatoes into a thick paste, more concentrated than tomato sauce but not as thick as tomato paste. |
3. | Return the chicken to the pan along with the tomatoes, white wine, and oregano. Simmer for 30 minutes, or until the chicken is cooked through. If the pan becomes dry, add a little of the reserved tomato liquid sparingly. |
4. | Stir in the drained and rinsed cannellini beans, simmering for an additional 5 minutes until heated through. |
5. | Garnish the stew with optional sprigs of fresh oregano before serving. |
