2 chopped into 1-inch cubes

½ chopped
3 tablespoons sifted
1 cup full-fat
1 teaspoon measured
½ teaspoon added as seasoning

Instructions

1. Begin by preparing the ingredients. Chop the zucchini, onion, and pepper into uniform pieces, approximately 3/4 inch in size. Set these vegetables aside. Similarly, chop the mango and keep it separate from the vegetables.
2. In a large saute pan over low-medium heat, combine the curry paste with a few tablespoons of coconut milk. Ensure to use the creamy portion from the top if using fresh coconut milk. Heat the mixture while stirring until it becomes fragrant and starts to bubble. Increase the heat to medium, add the diced chicken breast, ensuring it is well coated in the curry mixture. Saute the chicken until it is fully cooked, typically taking around 5-7 minutes.
3. Once the chicken is cooked through, introduce the prepared vegetables into the pan followed by the remaining coconut milk. Gradually incorporate the coconut milk to achieve the desired consistency of the curry. Adjust the amount based on your preference for a thick or thin curry. Stir the curry well, reduce the heat to low for a gentle simmer, cover with a lid, and cook for about 10 minutes or until the vegetables are tender yet crispy.
4. Remove the curry from the heat and stir in the light brown sugar, fish sauce, and the reserved mango. Serve this delectable curry over a bed of steamed rice, preferably short grain, to complement the complex flavors.
