- Prepare the Bok Choy by washing it and separating the leafy greens from the thicker bottom part. Cut them accordingly and set aside.
- In a large pot, simmer the Red Curry Paste, minced ginger, garlic, and oil. Add the thicker part of the Bok Choy and let it infuse with the flavors.
- Bring the chicken broth to a boil. Meanwhile, cook your eggs and rice noodles to your preference.
- Stir in the coconut cream and coconut milk for a rich and creamy texture. Using both will enhance the overall taste.
- Season with brown sugar, fish sauce, and salt to reach the desired taste.
- Add the dark leafy part of the Bok Choy and allow it to wilt gently.
- To serve, arrange rice noodles, bean sprouts, boiled eggs, and green onion in a bowl. Customize with your favorite toppings.
