Exotic Coconut Curry Soup

2 | tablespoons Fish Sauce |
1 1⁄2 | tablespoons Brown Sugar |
4 | Boiled Eggs |
1 | bunch Bean Sprouts |
1 | Rice Noodles |
1 | sprig Green Onion |
Instructions
1. | Prepare the Bok Choy by washing it and separating the leafy greens from the thicker bottom part. Cut them accordingly and set aside. |

2. | In a large pot, simmer the Red Curry Paste, minced ginger, garlic, and oil. Add the thicker part of the Bok Choy and let it infuse with the flavors. |
3. | Bring the chicken broth to a boil. Meanwhile, cook your eggs and rice noodles to your preference. |
4. | Stir in the coconut cream and coconut milk for a rich and creamy texture. Using both will enhance the overall taste. |
5. | Season with brown sugar, fish sauce, and salt to reach the desired taste. |
6. | Add the dark leafy part of the Bok Choy and allow it to wilt gently. |
