A fragrant and creamy coconut curry soup with a blend of flavors that will transport you to the exotic lands of Asia.

Ingredients

1 12 pounds Bok Choy
7 ounces Coconut Cream
7 ounces Coconut Milk
32 ounces Chicken Broth
2 tablespoons Red Curry Paste
1 tablespoon Minced Garlic
1 tablespoon Minced Ginger
2 tablespoons Vegetable Oil
32 ounces Chicken Stock
2 tablespoons Fish Sauce
1 12 tablespoons Brown Sugar
4 Boiled Eggs
1 bunch Bean Sprouts
1 Rice Noodles
1 sprig Green Onion

Instructions

    1. Prepare the Bok Choy by washing it and separating the leafy greens from the thicker bottom part. Cut them accordingly and set aside.
    2. In a large pot, simmer the Red Curry Paste, minced ginger, garlic, and oil. Add the thicker part of the Bok Choy and let it infuse with the flavors.
    3. Bring the chicken broth to a boil. Meanwhile, cook your eggs and rice noodles to your preference.
    4. Stir in the coconut cream and coconut milk for a rich and creamy texture. Using both will enhance the overall taste.
    5. Season with brown sugar, fish sauce, and salt to reach the desired taste.
    6. Add the dark leafy part of the Bok Choy and allow it to wilt gently.
    7. To serve, arrange rice noodles, bean sprouts, boiled eggs, and green onion in a bowl. Customize with your favorite toppings.
