2 | tablespoons apple cider vinegar |

5 | about 1 cup husked ground cherries, halved |
2 | 2 medium plums, pitted and coarsely chopped |
4 | tablespoons butter, room temperature |
8 | slices whole wheat bread |
2 | 2 cups Gouda cheese, shredded |

Instructions
1. | To prepare the exotic chutney: |

2. | Begin by warming the canola oil in a medium saucepan over medium heat. Add finely minced shallots, garlic, and ginger, and sauté until fragrant, approximately 3 minutes. Incorporate ground coriander, cinnamon, and kosher salt, and stir for about 30 seconds. Introduce agave nectar, apple cider vinegar, and water to the mixture. Add the husked ground cherries and coarsely chopped plums, bringing the mixture to a gentle boil. Reduce the heat and simmer the chutney, stirring occasionally, for approximately 25 minutes. |
3. | Once the chutney has achieved a thick consistency, transfer it to a jar or small bowl to cool slightly. |
4. | To assemble the gourmet grilled cheese sandwich: |
5. | Spread a generous amount of room temperature butter on one side of each slice of whole wheat bread. Place one slice buttered side down in a small skillet. Sauté over medium heat, pressing down gently with a spatula. Cook until the bread turns golden brown and the cheese has melted. Flip the sandwich and repeat the process for the other side.
