Exotic Middle Eastern Barley, Lentil, and Rice Casserole
A delightful and aromatic casserole inspired by Middle Eastern flavors, featuring a harmonious blend of lentils, barley, rice, fruits, and fragrant spices.
Ingredients
1 | tablespoon olive oil |

1 | teaspoon ground cinnamon |
1 | teaspoon sugar |
½ | cup dried lentils |
½ | cup pearl barley |
½ | cup long-grain rice |
¼ | cup chopped dried apricot |
½ | cup raisins (I used golden sultanas) |
1 ½ | teaspoons dried mint |

Instructions
1. | Gently sauté the minced onion and finely chopped garlic for about 2 minutes until fragrant and translucent. |

3. | Bring the mixture to a gentle boil over medium heat; then, reduce the heat to low, cover the pan, and let it simmer for 20 minutes. |
4. | Introduce the long-grain rice, chopped dried apricots, raisins (preferably golden sultanas), and dried mint to the pan, stirring everything together. |
5. | Cover the pan and let the casserole simmer for an additional 20 minutes or until all the ingredients are tender and have absorbed the flavorful liquid. |
6. | Season the dish with freshly ground pepper to taste before serving. |
