Instructions

- Gently sauté the minced onion and finely chopped garlic for about 2 minutes until fragrant and translucent.
- Add the dried lentils and pearl barley to the pan, stirring well to combine.
- Bring the mixture to a gentle boil over medium heat; then, reduce the heat to low, cover the pan, and let it simmer for 20 minutes.
- Introduce the long-grain rice, chopped dried apricots, raisins (preferably golden sultanas), and dried mint to the pan, stirring everything together.
- Cover the pan and let the casserole simmer for an additional 20 minutes or until all the ingredients are tender and have absorbed the flavorful liquid.
- Season the dish with freshly ground pepper to taste before serving.
