Ingredients

1 tablespoon olive oil
1 small onion, minced
2 cloves garlic, finely chopped
1 teaspoon ground cinnamon
1 teaspoon sugar
½ cup dried lentils
½ cup pearl barley
½ cup long-grain rice
¼ cup chopped dried apricot
½ cup raisins (I used golden sultanas)
1 ½ teaspoons dried mint
pepper

Instructions

1. Gently sauté the minced onion and finely chopped garlic for about 2 minutes until fragrant and translucent.
2. Add the dried lentils and pearl barley to the pan, stirring well to combine.
3. Bring the mixture to a gentle boil over medium heat; then, reduce the heat to low, cover the pan, and let it simmer for 20 minutes.
4. Introduce the long-grain rice, chopped dried apricots, raisins (preferably golden sultanas), and dried mint to the pan, stirring everything together.
5. Cover the pan and let the casserole simmer for an additional 20 minutes or until all the ingredients are tender and have absorbed the flavorful liquid.
6. Season the dish with freshly ground pepper to taste before serving.
