12 | pineapple chunks |

Instructions

- Begin by mashing the pineapple chunks using a fork, and then combining all ingredients except for the shredded coconut.
- Spoon approximately 3 tablespoons of the batter onto a hot, greased griddle. Sprinkle a generous amount of shredded coconut on top, followed by another tablespoon of batter to cover the coconut. Allow the first side to cook.
- Carefully flip the pancake to brown the second side. Repeat this process for the remaining batter.
- Serve the warm pancakes topped with a pat of butter and a drizzle of additional pineapple juice for a truly decadent experience.
