Ingredients

2 basmati rice
4 hot vegetable stock or hot water
2-3 tablespoons oil or butter
1 large onion, finely chopped
1 aubergine, finely diced
2-3 tablespoons diced sun-dried tomatoes
1 cup cooked and drained chickpeas
1 teaspoon mixed spice
salt to taste
pepper to taste
Fresh, chopped parsley and dill

Instructions

1. Heat oil or butter in a pan, and fry the finely chopped onion until beautifully browned.
2. Add the finely diced aubergines to the pan and cook together for 5 minutes, ensuring they are well coated and mixed.
3. Introduce the diced sun-dried tomatoes, cooked chickpeas, and mixed spice to the pan, and thoroughly mix.
4. Add the washed basmati rice, ensuring it is well coated in the spice mix. Pour in the hot vegetable stock or water, season with salt and pepper, and bring to a boil.
5. Reduce the heat, cover the pan, and simmer for 12-15 minutes until all the liquid is absorbed.
6. Turn off the heat, place 2 or 3 pieces of kitchen paper on top of the rice, and tightly cover with the lid. Allow the rice to rest for 10 minutes.
7. Fluff the rice with a fork, and just before serving, sprinkle with freshly chopped parsley and dill.
