1 | large onion, finely chopped |
1 | aubergine, finely diced |
2-3 | tablespoons diced sun-dried tomatoes |
1 | cup cooked and drained chickpeas |
1 | teaspoon mixed spice |

Instructions

- Heat oil or butter in a pan, and fry the finely chopped onion until beautifully browned.
- Add the finely diced aubergines to the pan and cook together for 5 minutes, ensuring they are well coated and mixed.
- Introduce the diced sun-dried tomatoes, cooked chickpeas, and mixed spice to the pan, and thoroughly mix.
- Add the washed basmati rice, ensuring it is well coated in the spice mix. Pour in the hot vegetable stock or water, season with salt and pepper, and bring to a boil.
- Reduce the heat, cover the pan, and simmer for 12-15 minutes until all the liquid is absorbed.
- Turn off the heat, place 2 or 3 pieces of kitchen paper on top of the rice, and tightly cover with the lid. Allow the rice to rest for 10 minutes.
- Fluff the rice with a fork, and just before serving, sprinkle with freshly chopped parsley and dill.
