1. | Preheat a large stovetop skillet (with lid) with the high heat oil over medium high heat. Begin by adding the carrots to the skillet first, followed by the sweet potato (as carrots require slightly longer cooking time). Pour in the water and cover the skillet. |
2. | Allow the vegetables to steam for approximately 15-20 minutes without stirring the pan. It is important not to disturb the pan, even if the water appears to have evaporated. |
3. | Once the cooking time is up, remove the lid (without moving the pan) to check for doneness. If the sweet potatoes and carrots are cooked to your liking, sprinkle the honey and a pinch of salt over them. Gently shake the pan to coat the vegetables. The bottom of the vegetables should have a crispy, darkened appearance. Cook for an additional five minutes to achieve a slight browning on the other sides of the veggies. |
