Exquisite Curried Broccoli Salad
A delightful dish perfect as a side or for preparing in advance, this exquisite curried broccoli salad presents a lower-fat option by incorporating nonfat Greek yogurt in place of most of the mayonnaise.
Ingredients
1 | cup plain fat-free Greek yogurt, or to taste |

1/2 | teaspoon onion powder |

6 | cups chopped broccoli |
1 1/4 | cups dried currants |
1/2 | cup roasted sunflower seeds |
Instructions
1. | In a bowl, skillfully whisk together the plain fat-free Greek yogurt, mayonnaise, apple cider vinegar, Madras curry powder, honey, onion powder, and a touch of salt and pepper. Sample the mixture and adjust the seasonings to suit your palate. |
