A delightful dish perfect as a side or for preparing in advance, this exquisite curried broccoli salad presents a lower-fat option by incorporating nonfat Greek yogurt in place of most of the mayonnaise.

Ingredients

1 cup plain fat-free Greek yogurt, or to taste
1/4 cup mayonnaise
1/4 cup apple cider vinegar
2 tablespoons Madras curry powder
1 tablespoon honey
1/2 teaspoon onion powder
salt and ground black pepper to taste
6 cups chopped broccoli
1 1/4 cups dried currants
1/2 cup roasted sunflower seeds

Instructions

    1. In a bowl, skillfully whisk together the plain fat-free Greek yogurt, mayonnaise, apple cider vinegar, Madras curry powder, honey, onion powder, and a touch of salt and pepper. Sample the mixture and adjust the seasonings to suit your palate.
    2. In a large resealable container, expertly combine the chopped broccoli, dried currants, and roasted sunflower seeds. Pour in 1 to 1 1/2 cups of the prepared dressing. Seal the container and shake gently to evenly coat the ingredients. Any remaining dressing can be saved for later use.
    3. Allow the salad to chill in the refrigerator for a minimum of 3 hours before presenting it.
