Exquisite Miso-Sesame Seafood

A delightful dish featuring succulent Arctic charr, black cod, or mahi-mahi marinated in a flavorful miso-sesame mixture.
Ingredients
6 | 5 oz. each of Arctic charr, black cod, salmon, or mahi-mahi |

⅓ | cup any color miso (white or red) |
¼ | cup mirin |
¼ | cup water (sake can be used for added depth) |
¼ | cup sugar |
1-2 tablespoons toasted sesame oil |
Instructions
1. | Combine all ingredients, except the fish, in a shallow glass or baking dish of around 8" x 11" in size. There is no need to precook the marinade. |

2. | Arrange the fish fillets skin side down in the dish and spoon the marinade over them, ensuring all sides are well coated. |
3. | Broil the fish on a high rack until they are opaque and the tops are beautifully golden-brown, typically for 7 to 9 minutes. If the tops brown too quickly, simply move the dish to a lower rack and switch the oven to bake at 425 degrees for an additional five minutes, or until fully cooked. |
4. | For a delightful twist, marinate the fish overnight and grill them on cedar planks that have been soaked in water beforehand. Simply exquisite! |
