Instructions

Preparation of Seafood Stew
- Heat extra virgin olive oil in a large Dutch oven.
- Add chorizo sausage and cook, turning occasionally, until browned, approximately 8 minutes.
- Remove the sausage, cut it into 1-inch pieces, and set aside.
- Add thinly sliced fennel bulbs and sliced onions to the Dutch oven. Cook until tender, about 8-10 minutes.
- Return the sausage to the pan, then pour in the chicken stock, crushed tomatoes, and orange zest. Bring the mixture to a boil.
- Reduce the heat to low and simmer for 10 minutes.
- Gently stir in the sea bass, cover the pot, and cook for 3 minutes.
- Add the shrimp and mussels, cover, and continue cooking until the shrimp is pink and the mussels have opened, approximately 5 minutes.
- Discard any mussels that do not open.
- Serve the stew hot, garnished with reserved fennel fronds.
