2 tablespoons extra virgin olive oil
1 lb chorizo sausage
2 fennel bulbs, thinly sliced crosswise, fronds reserved
1 large onion, sliced
4 chicken stock
1 (28 ounce) can crushed tomatoes
1 orange zest of
2 sea bass, cut into 2-inch pieces
2 shrimp, peeled and deveined
2 mussels, scrubbed and debearded

Instructions

  • Preparation of Seafood Stew

    1. Heat extra virgin olive oil in a large Dutch oven.
    2. Add chorizo sausage and cook, turning occasionally, until browned, approximately 8 minutes.
    3. Remove the sausage, cut it into 1-inch pieces, and set aside.
    4. Add thinly sliced fennel bulbs and sliced onions to the Dutch oven. Cook until tender, about 8-10 minutes.
    5. Return the sausage to the pan, then pour in the chicken stock, crushed tomatoes, and orange zest. Bring the mixture to a boil.
    6. Reduce the heat to low and simmer for 10 minutes.
    7. Gently stir in the sea bass, cover the pot, and cook for 3 minutes.
    8. Add the shrimp and mussels, cover, and continue cooking until the shrimp is pink and the mussels have opened, approximately 5 minutes.
    9. Discard any mussels that do not open.
    10. Serve the stew hot, garnished with reserved fennel fronds.
