Most chili blends stop at cumin and garlic. This Sonoran-style mix keeps going: whole cumin seed and peppercorns toasted and ground with chili powder and paprika, then the surprises — chamomile, star anise, and dried orange — that give it a floral, citrusy edge you can't quite place but immediately want again. It makes a full cup: rub it on pork or chicken, stir it into beans, or dust it over corn.
