| • | fresh parsley |
| • | zest of ½ a lemon |
| • | juice of ½ a lemon |
| 1⁄4 | cup blanched almonds |
| 2 | garlic cloves |
| 2 | small red chiles, seeded and chopped |
| 1⁄2 | teaspoon cumin |
| 1⁄2 | teaspoon Kosher salt |
| 1 | pinch freshly ground black pepper |
| 1 | pound uncooked shrimp, peeled and deveined |
| Preparation of Spicy Herb Mixture | |
|---|---|
| 1. | In a food processor, combine ¼ cup of olive oil, fresh cilantro, parsley, lemon zest, lemon juice, blanched almonds, garlic, red chiles, cumin, kosher salt, and freshly ground black pepper. Pulse until the ingredients form a uniform mixture that is close to a paste consistency. If the mixture seems too dry, add a little more olive oil. |

| 1. | In a large bowl, toss the uncooked shrimp with the spicy herb mixture. |
| 2. | In a medium saucepan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the marinated shrimp and cook until they turn just pink, which usually takes about 3-5 minutes. |
| Serving Suggestions | |
| 1. | Serve the delectable shrimp over a bed of rice, tabbouleh, fresh greens, or any other accompaniments of your choice. |
