Instructions
For preparing the stew | |

1. | Peel and chop the sweet potatoes into hearty chunks. Dice the carrots, celery, and onions. Drain and quarter the tomatoes from the can. |
2. | In a large Dutch oven or stockpot, heat 2 tablespoons of peanut oil over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. Add onions, carrots, and celery, cook while stirring occasionally for 2 minutes. Add minced garlic and cook for an additional minute. Stir in sweet potatoes, broth, and tomatoes. Bring the stew to a boil. Reduce heat, cover, and simmer for 20 to 30 minutes. |
