   Exquisite Vegan African Sweet Potato Stew

| 1 | ((28 ounce)) can whole tomatoes | 
| 1 | teaspoon salt, divided | 
| 1⁄4 | teaspoon black pepper | 
| 1⁄4 | teaspoon cayenne | 
| 1⁄2 | cup chunky peanut butter | 
| 3 | tablespoons peanuts, roasted | 
| 1⁄2 | cup light coconut milk | 
Instructions
| For preparing the stew | |

| 1. | Peel and chop the sweet potatoes into hearty chunks. Dice the carrots, celery, and onions. Drain and quarter the tomatoes from the can. | 
| 2. | In a large Dutch oven or stockpot, heat 2 tablespoons of peanut oil over medium-high heat. Add curry powder and cook, stirring constantly for 1 minute. Add onions, carrots, and celery, cook while stirring occasionally for 2 minutes. Add minced garlic and cook for an additional minute. Stir in sweet potatoes, broth, and tomatoes. Bring the stew to a boil. Reduce heat, cover, and simmer for 20 to 30 minutes. | 
| 3. | Season the stew with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, peanuts, cayenne, peanut butter, and coconut milk. Stir to combine the ingredients. Allow the stew to simmer for an additional 20 minutes. |
