Preparation of Chow Mein
- Prepare all the vegetables, sauces, and eggs before beginning to cook. Cook the Chinese egg noodles according to the package instructions, then drain and set aside.
- In a pan, melt butter over medium heat, beat the eggs and pour into the pan. Scramble the eggs until cooked through, then set aside.
- In a wok, heat vegetable oil and chili oil. Stir-fry the onions and minced garlic until fragrant. Add the bell peppers, cabbage, tofu, and continue stir-frying over high heat. Incorporate the soy sauce, chili garlic sauce, black bean garlic sauce, and Sriracha. Finally, add the cooked noodles and scrambled eggs, stir-fry until everything is well combined.
