1 packet of Chinese egg noodles
1 teaspoon vegetable oil
1 teaspoon chili oil
1 cup sliced onions
2 tablespoons minced garlic
2 cups of green and red bell peppers, sliced
2 cups of cabbage, thinly sliced
1 packet of tofu, cubed
3 tablespoons soy sauce
2 tablespoons chili garlic sauce
3 tablespoons black bean garlic sauce
2 teaspoons Sriracha
4 eggs
1 teaspoon butter
fresh ground black pepper
2 scallions, sliced

Instructions

Preparation of Chow Mein

1. Prepare all the vegetables, sauces, and eggs before beginning to cook. Cook the Chinese egg noodles according to the package instructions, then drain and set aside.
2. In a pan, melt butter over medium heat, beat the eggs and pour into the pan. Scramble the eggs until cooked through, then set aside.
3. In a wok, heat vegetable oil and chili oil. Stir-fry the onions and minced garlic until fragrant. Add the bell peppers, cabbage, tofu, and continue stir-frying over high heat. Incorporate the soy sauce, chili garlic sauce, black bean garlic sauce, and Sriracha. Finally, add the cooked noodles and scrambled eggs, stir-fry until everything is well combined.
4. Taste and adjust seasoning with salt if necessary. Garnish the chow mein with sliced scallions and serve hot.
