| 1 | tablespoon sugar | 
| 1 | garlic clove, crushed | 
| 2 | inches fresh gingerroot, grated | 
| 1 | pound boneless skinless chicken breast, cubed | 
| 3 | leeks, white part only, cut into ½ inch pieces | 
| For preparing Yakitori Chicken | |

| 1. | Combine sake, soy sauce, sugar, crushed garlic, and grated ginger in a medium dish. Add cubed chicken and marinate for 15 minutes. | 
| 2. | Preheat the oven's broiler. | 
| 3. | Grease six metal skewers and thread with 3 pieces of chicken and 2 pieces of leek alternately. | 
| 4. | Place the skewers on a baking sheet or broiling pan, brush with the marinade. | 
| 5. | Broil for about 5 minutes, baste with marinade, then broil for another 5 minutes or until the chicken is fully cooked. Discard any remaining marinade. |
