2 | handfuls rice noodles |
1 1⁄2 | cups fresh spinach, coarsely chopped |
1⁄2 | teaspoon red pepper flakes |
1 | large portobello mushroom, very thinly sliced |
5-6 | tablespoons miso paste |
2 | tablespoons fresh basil, finely chopped |
Instructions
For soup | |

1. | Bring 5 cups of water to a boil. |
2. | Add rice noodles and boil briefly until just flexible. Stir in mushrooms, spinach, and red pepper flakes. Simmer until noodles are tender. |
3. | Remove pot from heat and stir in the miso paste tablespoon by tablespoon. |
4. | Ladle the soup into bowls and garnish with freshly chopped basil and extra red pepper flakes if desired. |
