A delightful and hearty salad featuring French green lentils, sweet grapes, crunchy walnuts, creamy feta cheese, and a tangy dressing.

Ingredients

1 cup French green lentils
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 teaspoon honey
½ teaspoon salt
½ cup finely diced red onion
2 halved grapes
¾ cup walnut pieces
¾ cup crumbled feta cheese
1 tablespoon olive oil

Instructions

    1. In a medium pot, bring 3 cups of water to a rolling boil. Add French green lentils, reduce heat to a simmer, and cook until the lentils are tender yet firm, approximately 20 minutes.
    2. Meanwhile, in a large bowl, whisk together lemon juice, red wine vinegar, honey, and salt. Add finely diced red onions and set the mixture aside.
    3. Drain the cooked lentils and rinse them under cold water. Add the lentils, halved grapes, walnut pieces, crumbled feta cheese, and olive oil to the onion mixture. Gently mix everything together and refrigerate until ready to serve.
