Ingredients

1 bunch Fresh cilantro
12 Red onion
2 Garlic
1 Cucumber
3 Fresh corn
12 cup Black beans
12 Cabbage coleslaw mix
12 cup Sour cream
2 tablespoons Red wine vinegar
14 cup Extra virgin olive oil
1 Lime juice
Salt, pepper
3 Tomatoes

Instructions

1. Begin by soaking the red onion in water for approximately 30 minutes. If using frozen corn, defrost it, or grill fresh corn on the cob. Allow the corn to cool before adding it to the salad.
2. Peel the cucumber and dice it roughly.
3. Roughly chop the garlic, red onion, tomatoes, and cilantro. If you opted for grilled corn, carefully remove the kernels from the cob.
4. Prepare the salad dressing by combining minced garlic, freshly squeezed lime juice, sour cream, red wine vinegar, and extra virgin olive oil in a small bowl.
5. In a large mixing bowl, combine the soaked red onion, tomatoes, corn, cucumber, well-rinsed black beans, and the pre-chopped cabbage coleslaw mix to create the salad base.
6. Drizzle the prepared dressing over the salad and gently toss to evenly coat all the ingredients. Season with salt and pepper to your preference. Finally, fold in the fresh cilantro just before serving. Allow the salad to chill in the refrigerator for 20-30 minutes before serving to enhance the flavors.
