These fudge brownies bake up with a shiny, delicate top and a dense chocolate center. Cocoa powder, melted butter, chocolate chips, and optional pecans make a classic 9-by-13-inch pan of brownies for sharing.

Instructions

1. Preheat the oven to 350 degrees F (175 degrees C).
2. Lightly grease a 9-by-13-inch baking pan.
3. Melt the butter in a saucepan over low heat or in a microwave-safe bowl.
4. Stir in the granulated sugar until the mixture is evenly combined.
5. Warm the butter mixture briefly until hot to the touch but not bubbling, then stir until it looks glossy.
6. Transfer the mixture to a large mixing bowl.
7. Whisk in the cocoa powder, salt, baking powder, and vanilla until no dry pockets remain.
8. Add the eggs one at a time, beating well after each addition until the batter is smooth.
9. Fold in the flour just until incorporated.
10. Fold in the chocolate chips and the pecans, if using.
11. Spread the batter evenly in the prepared pan.
12. Bake for 28 to 30 minutes, until the edges are set and a tester inserted near the center comes out with moist crumbs attached.
13. Let the brownies cool for 5 minutes, then run a table knife around the edge of the pan.
14. Cool completely in the pan before cutting into 24 squares.
