Instructions

    1. Prepare the Tools: Make sure you have an Electric Pressure Cooker or Instapot ready for use.
    2. First Step: Thaw the Double 8 Cattle Company Fullblood Wagyu beef for stewing and beef bacon in the refrigerator 24 hours prior to cooking.
    3. Preparing the Fullblood Wagyu Beef and Bacon: Heat up the Instapot or pressure cooker in sauté mode. Add grapeseed oil. Season the Fullblood Wagyu beef for stewing with kosher salt and freshly ground black pepper. Sear the beef for 4 minutes on each side for caramelization. Add the Fullblood Wagyu beef bacon and cook until crisp.
    4. Preparing the Stew: Add diced carrots, potatoes, onions to the pot. Sauté for 10 minutes. Stir in tomato paste and cook until fragrant. Deglaze with red wine and allow it to reduce for 10 minutes. Add beef stock, Worcestershire sauce, sherry vinegar, sun-dried tomatoes, garlic, thyme, and rosemary. Pressure cook on low for 25 minutes, then release pressure for 30 minutes.
