Gourmet Chicken and Potato Lasagna
A delicious and rich homemade lasagna with layers of chicken, potatoes, and an assortment of cheeses, baked to perfection.
Ingredients

1 | cup sun-dried tomato, drained and chopped |
1⁄2 | cup red bell pepper, diced |
1 | bunch green onion, white parts only, chopped |
2 | garlic cloves, minced |
3⁄4 | cup water |
1 1⁄2 | teaspoons italian seasoning |
1 | teaspoon salt |
1⁄2 | teaspoon pepper |
2 | lbs ground chicken |
1 | (16 ounce) package lasagna noodles |
1 | (24 ounce) package Simply Potatoes Traditional Mashed Potatoes |
3 | tablespoons butter |
1⁄4 | cup sour cream |
1 | cup mozzarella cheese, grated |
1 | cup swiss cheese, grated |
2 | cups white cheddar cheese, grated |
8 | ounces goat cheese |
Instructions
1. | To prepare the sauce, in a large stockpot, combine the rich alfredo sauce, petite diced tomatoes, sun-dried tomatoes, diced red bell pepper, chopped green onions, minced garlic, water, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 1 hour. |

2. | In a separate saucepan, crumble the ground chicken and cook it until no longer pink. Add the cooked chicken to the stockpot and let it simmer for an additional 15 minutes. |
3. | Meanwhile, cook the lasagna noodles according to the package instructions, drain, and set aside. |
4. | Prepare the mashed potatoes following the package instructions, then stir in the butter and sour cream. |
5. | Preheat the oven to 350 degrees Fahrenheit. |
6. | To assemble the lasagna, start by spreading a thin layer of the sauce in the bottom of a 9x13-inch baking pan. Then, layer one-third of the lasagna noodles, mashed potatoes, grated Mozzarella, Swiss cheese, and white Cheddar cheese. Crumble small pieces of goat cheese over the other cheeses. Add another layer of sauce. Repeat these layers two more times, ending with a top layer of cheeses. Bake the lasagna for 35 to 40 minutes, or until the cheese is melted and bubbly. |
