Gourmet Impossible Burger Trio (Vegan)
A sophisticated twist on the classic burger featuring three delicious variations of the Impossible Burger, Beyond the Ordinary.

Instructions
1. | Tavern-Style: Form the meat into two 6-ounce portions, delicately molding each into patties measuring 1 1/2-inches in height and 3 1/2-inches in diameter. Heat a griddle or large frying pan over medium-high heat, adding vegetable oil. Sear the patties until perfectly charred, approximately 2-3 minutes on each side for the Impossible Burger, and 4 minutes for the Beyond Burger. Serve on a seeded or regular burger bun, topping as desired. |

2. | Smash Burger: Divide the meat into 3 or 4 4-ounce portions, gently shaping into patties measuring 1 1/2-inches in height and 3 1/2-inches in diameter. Heat a griddle or large frying pan over medium-high heat, with a light coating of vegetable oil. Sear the patties until deeply charred on one side, about 2-3 minutes for the Impossible Burger, and 4 minutes for the Beyond Burger. Flip the patties, pressing with a spatula to achieve a 1/2-inch thickness. Top with a slice of cheese, cooking until the cheese is melted and edges are crisp, an additional 3-4 minutes. Serve on seeded or regular burger buns, topping as desired. |
3. | Vegan Cheesiest Cheeseburgers (inspired by Emma Laperruque’s recipe): Combine the meat and cheddar cheese shreds in a mixing bowl, thoroughly mixing with your hands. Divide the mixture into 6 or 8 2-ounce portions, gently shaping into patties approximately 1-inch in height and 1 1/2-inches in diameter. Heat a griddle or large frying pan over medium-high heat, with a light coating of vegetable oil. Add the patties, flattening to a 3 1/2-inch diameter. Cook until the bottom is crispy, about 3-4 minutes. Flip the patties, cooking for an additional 3 minutes. Place 2 patties on each toasted English muffin or bun, topping as desired. |
