1 cup milk
1 pint heavy cream
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
1 teaspoon salt
¼ teaspoon ground black pepper
3 sweet potatoes, peeled and sliced thin with a mandoline (about 12 sweet potatoes, depending on size)
1 tablespoon chopped fresh parsley leaves
2 tablespoons butter, cut into chunks, plus more
butter (for baking dish, or use cooking spray for baking dish)
¼ cup panko breadcrumbs
¼ cup grated cheddar cheese

Instructions

    1. In a large saucepan, combine the milk, heavy cream, ground nutmeg, ground cinnamon, salt, and ground black pepper. Gently fold in thinly sliced sweet potatoes. Bring the mixture to a gentle simmer and allow the sauce to thicken. Preheat the oven to 350 degrees F.
    2. Butter a 3-quart baking dish. Prepare the gratin topping by combining panko breadcrumbs, chunks of butter, and grated cheddar cheese. Transfer the sweet potato mixture to the baking dish and sprinkle the gratin topping over it. Bake until the sweet potatoes are cooked through, for about 35 to 45 minutes.
