Ingredients

1 lb gravad salmon, according to Salmon Trilogy (Part II): Gravad Salmon, can be replaced by canned Salmon
5 ounces spaghetti
10 ounces green beans
3 tablespoons olive oil
1 small onion, chopped
6 eggs
1 cup low-fat milk
5 tablespoons cream
1 pinch pepper

Instructions

  • For the Frittata

    1. Cook the spaghetti al dente according to package directions. Remember to only drain the spaghetti, do not rinse.
    2. Remove as much marinade as possible from the gravad salmon. If it is very salty, rinse slightly and pat dry with paper towels.
    3. Cut the salmon into bite-sized pieces.
    4. In a small bowl, mix together the eggs, milk, and cream. Add the salmon and pepper, then mix well.
    5. In a 10-inch diameter oven-proof pan, cook the chopped onion in olive oil over medium-high heat until soft, about 1 to 2 minutes. Remove from heat.
    6. If necessary, cut the green beans into pieces.
    7. Add the green beans, spaghetti, and salmon-milk mixture to the onions and mix well. Note that the frittata will not be stirred during cooking, so ensure the mixture has the desired final look.
    8. Cover the pan with a lid or aluminum foil and cook for 25 minutes on low heat without stirring. The edges of the frittata should become dry, resembling an omelet.
    9. Meanwhile, preheat the grill in the oven to 480°F (250°C).
    10. After cooking, remove the lid from the pan and place the frittata under the grill. Bake the frittata until the surface is cooked and slightly browned, about 5 to 10 minutes.
    11. Remove the frittata from the oven and let it set for 5 minutes.
    12. Carefully detach the frittata from the pan. Invert the frittata over a plate larger than the pan and allow it to slide onto the plate.
    13. Cut the frittata into wedges and serve with a fresh green salad.
    14. For variations, you can use canned salmon or tuna, but adjust the salt to taste. You can also replace green beans with peas or use any other pasta.
