Ingredients

2 cans black beans (rinsed)
1 white onion, chopped
1 can diced tomatoes
peppers in adobo sauce
big dollop pureed garlic
cumin
thyme
chili powder
turmeric
salt
pepper
fresh cilantro
Cheddar cheese, grated
1 lime
sour cream

Instructions

1. In a skillet, sauté the chopped white onion in olive oil until translucent. Stir in cumin, thyme, chili powder, turmeric, salt, and pepper, allowing the seasonings to release their aromas.
2. Add the rinsed black beans and diced tomatoes along with a can of water. Stir in the peppers in adobo sauce and a big dollop of pureed garlic. Let the mixture simmer and meld the flavors.
3. Incorporate the rest of the ingredients into the simmering pot, allowing the flavors to blend harmoniously.
4. Once the dish is cooked through, remove from heat and gently squeeze the fresh juice of one lime over the beans, giving it a citrusy kick.
