Hearty Ground Beef and Summer Squash Skillet

Ingredients
8 | medium summer squash, sliced |

1 | lb lean ground beef |
1⁄2 | cup long grain rice, uncooked |
1 | medium onion, chopped |
1 | (8 ounce) can tomato sauce |
1 | (15 ounce) can diced tomatoes |
1 | teaspoon salt |
1⁄2 | teaspoon pepper |
1 | cup water |
Instructions
1. | Slice the summer squash to about 1/4 inch thickness. |

2. | In a large skillet, create layers starting with tomatoes, followed by tomato sauce, chopped onions, water, and a blend of seasonings. Stir well to combine. Add the sliced squash, then sprinkle the uncooked long grain rice. Crumble the lean ground beef over the top. (The steam generated will cook the ground beef and rice simultaneously.) Bring the mixture to a boil, then cover the skillet, reduce the heat, and simmer for 50 minutes. Stir occasionally and add more water if necessary. |
3. | Allow the skillet dish to rest for 15 minutes before serving. |
